After our Jiro date, we travelled 1.5 hours southwest of Tokyo into Kanagawa, all 108km (like Melbourne to Torquay) to arrive in the city of Yugawara, which happens to host one of the top ramen spots in Japan. We waited another 1.5 hours to get a seat at the table.
Shoyu ramen
Tsukemen
The shoyu was an elevation of the senses – clear, complex, with flavours clinging to every strand of noodle. The tsukemen, out of the box, had noodles sitting in a dashi membrane similar to seaweed appetisers. You were instructed to eat it with salt first to understand the differing umami. Then you would proceed to dip, and you could also blend in some wasabi, broken nori bits, and citrus solution. A journey indeed.
